Hawari

Hawari is an Arabica coffee grown in the Al-Qafr District of the Ibb Governorate, where altitudes of 1,900 to 2,000 meters and a 70% shading system create a cool, humid environment. The small, pyramidal trees of the Hawari–Tuffahii variety grow in sandy loam soils with a slightly alkaline pH of about 8 and benefit from annual rainfall of 500 to 800 millimeters. Farms stretch across intermountain fields and valley plains, nourished by rain, springs, and spate irrigation. Fertilization relies on composted animal manure and decomposed forest leaves, particularly from nearby mango trees, while weeding is done entirely by hand. Traditional pest control uses smoke from dry wood of local shrubs, and trees are planted at a density of around 1,500 per hectare. Harvested between October and March, the coffee cherries are handpicked, sun-dried on rooftops and raised beds, hulled, and then sorted and graded with care. The resulting organic, specialty-grade green coffee is notable for its delicate sweetness, balanced acidity, and bright, aromatic profile shaped by the region’s fertile soils and abundant rainfall.
