Haimi
Haimi is an Arabica coffee composed of Dawaeri and Tuffahi beans, grown in the Haima Dakhliya and Kharijea districts of the Sana’a Governorate. The coffee is cultivated at altitudes of 1,000 to 2,000 meters with 30% shading and an average annual rainfall of 400 to 500 millimeters. It grows on mountainous terraces, intermountain plains, upper slopes, and floodplain fields with clay loam and sandy clay loam soils, having a pH of 7 to 8. Farming practices use composted animal manure and forest leaves for fertilization, and irrigation from rain, wells, springs, spate irrigation, and caravans. Weeding and soil turning are performed manually or with animals, and pest control uses smoke from dry Ficus salicifolia wood and organic plant-based sprays. The coffee is harvested manually from October to March and processed through rooftop and raised-bed sun drying, hulling, sorting, and grading using dry mill machines.
